Symbolic dishes of Italian haute cuisine
One of the dishes presented in the Gulf of Castellammare is a first course that I called Vedova Allegra, specifically tagliatelle kneaded with an ancient organic grain of Sicilian origin called perciasacchi with a shellfish sauce.
The tagliatelle dough is made of flour, salt, oil with the addition of black ink and blanched cuttlefish with vegetables, so as to create a full-bodied tagliatelle; the seasoning is composed of: lobster, shrimp from our gulf both white and red, crab meat, Bronte pistachio, Agrigento almonds, after cooking everything is mixed in a pan for a few minutes, but to conclude and give a touch of class after having plated it, a cascade of Bronte pistachio grains is added.

Another dish that inspired me is the sardine (Gulf sardine) rolls a beccafico, revisited in a modern style.
Specifically, I created a mixture of onion, wine, balsamic vinegar, salt, pepper, sugar, until a creamy mixture is created, adding almonds at the end of cooking. When the mixture is very cold, I put a coffee spoon on the already cleaned, filleted sardine, already sprinkled with salt, pepper, and a handful of almonds so as to roll them up, pass them in flour and put them in the oven. Once cooked, they are served with a cascade of onion on top.
